Vegetarian Moroccan Stew

INGREDIENTS

  • 1 onion chopped
  • 3-4 cloves of garlic, minced
  • 4 white potatoes chopped
  • 2 sweet potatoes, chopped
  • 1 carrots chopped
  • 1 tsp. cumin
  • 5 tsp. ginger
  • 1 tsp. paprika
  • 1 tsp. turmeric
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 tbsp. olive oil
  • 1-1/2 cup water
  • 1 cup cooked chickpeas

DIRECTIONS

  • Heat the olive oil in a pot and add onions, garlic, and spices. Cook until fragrant for about 5 minutes.
  • Add the remaining vegetables and water to the pot and bring to a boil for about 15 minutes (or when vegetables are tender).
  • Check to see if the potatoes are soft. If they are, add the chickpeas and cook the tajine for 10 more minutes.
