Baked Almond Chicken

INGREDIENTS

  • 1cup ground almonds
  • 1 dried oregano
  • 1 dried basil
  • 1 dried parsley
  • 1 sea salt
  • 1 freshly ground pepper
  • 2 melted coconut oil

DIRECTIONS

  • Preheat the oven to 450 degrees F / 230 degrees C.
  • Combine the almonds, oregano, basil, parsley, salt and pepper in a small bowl.
  • Rinse the chicken breasts and pat dry with paper towels and place on plate.
  • Gently pat the chicken on each side with the almond mixture and place on a baking sheet or in a shallow glass baking dish.
  • Drizzle the oil over the chicken and bake in the oven for 12-15 minutes (depending on the thickness of each chicken breast).
