Moroccan Lentil Stew

INGREDIENTS

  • 2 cups brown lentils
  • 1 medium white onion, chopped
  • 3 cloves of garlic, finely chopped or pressed
  • 4 tbsp. chopped fresh parsley
  • 2 1/2 tsp. cumin
  • 2 1/2 tsp. paprika
  • 1 1/2 tsp. ginger
  • 1/2 tsp. pepper
  • 2 tsp. sea salt
  • 1/3 cup olive oil

DIRECTIONS

  • Mix all ingredients in a pot. Add 8 cups of filtered water, and bring to a simmer for 1 1/2 hours or until lentils are tender and soupy
